Dandelion is on the Menu, Spring Has Sprung

When you walk outside a Sea of  Yellow meets you. It is time for the humble weed to make its appearance. Here In Central Pennsylvania we eat them.

Easy Dandelion cookies. You will need 1/2 of oil, 1/2of honey, 2 eggs, 1 teaspoon vanilla, 1 cup flour, and one cup rolled oats. Finally the topping is to go into yard and pick one cup of dandelion flowers. You will begin by mixing the oil and honey. Blend in the eggs and vanilla. Incorporate the dry , finally adding the washed and cleaned flower petals. These bake in a 375 degree oven for 12 minutes. I do a tablespoon of batter for each. These are divine.

Simple Greens Salad. 4 cups of Dandelion greens, 1 red onion round sliced, 2 tomatoes sliced. Toss those ingredients together in a large bowl and then plate onto a platter. A simple Lemon vinaigrette compliments the bitterness of the greens . Salt and Pepper to taste!

Let’s not forget . You can make Dandelion Mead, Jelly, Wine, And Tea. You may even want to try My Hot Bacon Dressing with them Too!

Campfire Cooking, Easy Family Night

When I think campfire Hot dog is the GO TO MEAL! Nope, when I was young I learned campfire food could be amazing.

HOBO Wraps A campfire meal in one packet. You can get the kids involved and they just might eat what they cook. You will need a assembly line to make them, lets all get involved. Start with Good Quality Ground Beef, Carrots ( thick rounds), Sweet Onions ( Thicker Rounds), Baby Potatoes, and Cabbage leaves. Make a Baseball sized , well seasoned Burger. Place the Cabbage Leaf in the center of a larger sized thick aluminum foil. In with the Burger, add carrots, onion, taters , and season to taste. I love to hit them with salt, pepper , ground garlic, and Montreal Steak seasoning. Fold the cabbage to enclose them. The Cabbage acts a steaming Cocoon. I often use 2 to 3 leaves so the inside does not burn, camp fires ARE NOT AN OVEN! Use 2 to 3 layers of the foil to secure each HOBO Wrap. This is the time to enjoy your family and let the HOBO Cook. When you open them , have a bit of butter to add to those Taters. This is a Full Meal in one Wrapper.

Weekend Eats

Here comes the weekend again and parents everywhere are thinking what can I Feed my Kids. This weekend gather your family and get everyone involved in cooking!

Spring is here and we need to get outside. Grab a couple packs of seeds and some empty containers , plant your starter pots. After an afternoon of work , maybe a campfire would occupy your kiddos. Today I will give you some Simple ways to eat outdoors with kids.

A Great Salad, That is all I want after a Holiday Meal

This is my Mantra after eating all those things I shouldn’t during the Holiday. It seems like a Easter Treat hangover has hit my Body for the last two days. This blog I will teach you how to make 2 simple salads that will get rid of your TREATS HANGOVER!

Strawberry Chicken Salad. I always make this one with a mixed greens prepackaged bag. Super simple and cost effective. 1 Entire Bag into a large bowl, or a serving plate. I prep 1 pint of strawberries into quarters, 1 small red onion into rounds, 2 large Grilled chicken Breasts into strips , and 1 cup of pecans. Spread the ingredients on the serving plate, or add them all to the bowl. Dressing. I choose between two on this one. A Strawberry vinaigrette or Panera’s Lemon Poppy Seed Dressing.

The other is Super Simple , yet very Tasty. BLT Cobb. Start with Romaine chunked , add Tomato cubed , onion sliced, egg sliced , and Bacon to cover. I often add Chicken to this one Too! I serve this with Ranch.

Holiday Cooking Hangover , Soup Remedy

What do you do with all that leftover ham?? Ham and Bean soup, that’s what.

This recipe is simple and Hearty. You will need at least 1 to 2 pounds of Ham. Into your crockpot goes 1 cup chopped of celery, carrots, onions, and 3 cloves garlic minced. You will add in 2 large cartons of Vegetable stock. Cube or Dice the Ham and add to the crockpot. My Secret weapon is always 2 packets of Vegetable Dip mix. At this point I add 2 large cans of Great Northern Beans. Turn your crock onto High and cook 4 hours. This will fill your him with amazing aroma and your Belly with warm soup.

Kraken Carrot Spice Cake

Every Holiday I find a way to release the Kraken in my Cooking. This Easter I have turned my Raisins into Pirates.

Preheat your oven to 350. Place 1 cup of Raisins into a baking dish and add 1 small Nip Bottle of Kraken Rum. Place them in the oven for 10 minutes remove and cool. Now let’s start the cake.

2 cups white sugar, 1 cup dark brown sugar, 1 cup crisco shortening and cream until smooth. Add in 1 cup baby food carrots, 4 large eggs , 1 tsp vanilla mix in well. Next graze 2 large carrots and add. In superset bowl sift 2 cups flour, 2 tsp baking powder, 2 tsp baking soda and 1 tsp salt. Add 1 tsp cinnamon and 1 tsp nutmeg. Gradually add the flour into the wet ingredients. Finally by hand stir in 1 cup walnuts and the Kraken Raisins. Bake at 350 for 30 minutes. I use my large cake pan. This is super moist and great with Cream cheese Icing! Cream Cheese Icing 1 8 ounce cream cheese ( room temp) , 1/2 stick butter , 2 cups Powdered sugar and 2 tsp vanilla. 2 TBSP Coffee creamer Vanilla. Whip cream cheese and butter until thick and smooth, add sugar and vanilla. Whip until thick add half the amount of creamer and adjust until you get the thickness you desire. Spread this on your Carrot Cake and Eat like a King! Anyone Can Cook, Now you made a Wicked Original!

Cakes, Pies and Candies OH MY! That’s what Easter is made For!

It makes no difference what you create , your family will love the sweet ending you make.

Let’s start with a crowd pleaser cake. Pineapple Upside Down Cake Begin by melting one stick of Butter 1 cup dark Brown Sugar in a Large Cake Pan in a 350 degree oven for 5 minutes. Make sure the goodness is thick and spread evenly. Layer the bottom of the pan with sliced Pineapple rings. Make it Pretty we will see it later! Add one Cocktail cherry to the center of each ring. I sprinkle this layer with 1/2 cup more of brown sugar. Mix your favorite store bought yellow cake mix adding the pineapple juice instead of water. Pour the batter over the lovely sticky bottom of the cake pan. Bake at 365 for 25 minutes, until baked. Invert the warm pan onto a foil covered baking sheet. Make sure it is large enough to hold the cake and All The juice. Do t panic if a cherry or ring sticks. Remove and place it bake in the hot cake. Cool and serve. Or if you are a Cake Junkie, EAT IT HOT!

Peanut Butter Pie , Anyone? This one is super simple. Start with a store bought chocolate graham cracker crust , and make the filling. You will need 1/2 cup creamy PB, 2 tsp vanilla , 8 ounces cream cheese and 1 run of whipped topping. I always beat the PB and cream cheese until creamy and then add vanilla and whipped topping. Fill the pie shell and refrigerate until served !

Finally , a simple dessert that is weeping the Pinterest nation. Apples, candy and Whipped cream. This is So Good and Kid Easy. I like Snickers or Reese’s. You make the call. Cube 4 to 5 Saturday apples, diced 1 cup of candy and mix with one tub of whipped cream. Yum!
