Every Holiday I find a way to release the Kraken in my Cooking. This Easter I have turned my Raisins into Pirates.
Preheat your oven to 350. Place 1 cup of Raisins into a baking dish and add 1 small Nip Bottle of Kraken Rum. Place them in the oven for 10 minutes remove and cool. Now let’s start the cake.
2 cups white sugar, 1 cup dark brown sugar, 1 cup crisco shortening and cream until smooth. Add in 1 cup baby food carrots, 4 large eggs , 1 tsp vanilla mix in well. Next graze 2 large carrots and add. In superset bowl sift 2 cups flour, 2 tsp baking powder, 2 tsp baking soda and 1 tsp salt. Add 1 tsp cinnamon and 1 tsp nutmeg. Gradually add the flour into the wet ingredients. Finally by hand stir in 1 cup walnuts and the Kraken Raisins. Bake at 350 for 30 minutes. I use my large cake pan. This is super moist and great with Cream cheese Icing! Cream Cheese Icing 1 8 ounce cream cheese ( room temp) , 1/2 stick butter , 2 cups Powdered sugar and 2 tsp vanilla. 2 TBSP Coffee creamer Vanilla. Whip cream cheese and butter until thick and smooth, add sugar and vanilla. Whip until thick add half the amount of creamer and adjust until you get the thickness you desire. Spread this on your Carrot Cake and Eat like a King! Anyone Can Cook, Now you made a Wicked Original!
