Easter Brunch Recipe Galore

Ok, so we know what we are planning to serve lets get this cooking show on the road.

French Toast Casserole You will need 1 loaf per 6 people of Artisan Day OLD Bread. I prefer either Italian , Ciabatta, or a great Egg Bread. This needs cut into 2 inch thick slices. We will make the dredge. 12 eggs, 1 TBSP Vanilla, 1 tsp Cinnamon , 1 Tsp Nutmeg, and 2 cups milk. I always use Coffee creamer instead of milk. I love the way it tastes. dredge each piece and place in a Non Stick sprayed Casserole dish. I often place the pieces in a attractive design. I cut the bread into triangle shape and offset them to show an visually stunning finish. After you have them all dredged. Pour the remaining liquid into bottom of dish. Sprinkle the top with Cinnamon and Sugar, cover with foil , and bake in a 350 degree oven for 20 minutes. Remove foil and bake an extra 5 minutes to crisp top of casserole.

Sausage and Sweet Potato Hash This one is easy and so Good! You will need ( based on 8 adults) 2 pound of loose sausage , 2 Large Sweet Potato’s, 2 sweet onions, and 5 cloves garlic. Start by placing the sweet taters in the microwave for 5 minutes, this allows them to soften a bit for the hash. In a fry pan. mince the garlic and dice the onions to begin the Hash. Remove from the pan once cooked . You will then do the sausage, I fry until it is cooked, I remove the sausage and return the onion/ garlic mixture to the pan. This is when the magic starts crumble the fried sausage into a the size of dime shaped pieces. Add the cubed pre cooked Sweet Taters and Sausage. I season with Salt, Pepper and a bit of sage. You can add Fennel if you like that profile. This will give you a lovely Hash for a side dish. Place in a baking pan , cover with foil and keep warm until serving.

Waffles and Caramelized Bananas This dish you can cheat on a bit. If you don’t have a waffle maker, freezer will work. Also, Complete Waffle mix is my Go To on Busy Holiday meals. I love Krustez, MY PERSONAL Favorite! So make your waffles and place in a disposable pan covered with foil. HINT Let a corner undone for steam to escape! Now, let make those NANNERS! Fry pan 1/2 stick of butter, 4 cut Nanners in 1 inch thick pieces, brown sugar in the raw and cinnamon. Brown the Nanners add the sugar and the cinnamon and cook until thick! You are ready to serve! This one will go quick, I advise you double the amount written here!
