Into a large frying pan , melt one whole stick of butter. To the melted butter add 2 large sweet onions diced small. Fry until they are clear. Here comes the Vegetables. Diced Carrots, celery, and 4 large Idaho bakers all cubed into 1 inch pieces. Sauté until the veggies are a tender. To this beautiful base, 4 cups Vegetable or Chicken Stock. My Secret weapon is dry soup mix. I am partial to the Knorr brand. I use 1 packet Leek and Potato and 1 packet Vegetable dip mix. This where I transfer to my crockpot and add 2 cups Heavy Cream.
