Everyone growing up in a rural community knows soups are the lifeblood of the church fundraiser. One of my earliest memories was of two huge cauldrons cooking over a wood fire filled with soup.
Beef vegetable is a rich, hearty meal. Let’s get strait to the list. Shopping List…..1 3-4 pound Chuck Roast, Bag Of carrots, bunch of celery, 2 large onions, 5 potato’s, 1 large bag of frozen vegetables mixed, 2 large cans of diced tomatoes, and dry season mixes. I buy a onion soup mix, veggie dip mix and beef gravy mix. Lots of ingredients=lots of flavor!
Grab your crockpot! You are going to add the beef roast, French onion packet, salt, pepper, and water or a bottle of beer. I always add my Onion Slivered in Rings at this point. Roast on high for 3 hours or low overnight. Once the beef roast pulls apart chop all your vegetables and place in crock pot. Add the two remaining season packets, cans of tomatoes, frozen Vegetables, and 3 cups of water. Let it Cook! It will be an all day job , FOR YOUR CROCK POT! This is a Winner for any weeknight meal. Anyone Can Cook, like a Church Lady! Beef Vegetable is a winner at my house any night.
