With any great crock pot recipe gather ingredients and a little preparation leads to a quick meal. This is one of my favorite recipes because you can use Chicken, Beef or no meat and still get an amazing product.
Shopping list……Chicken Ground or Beef Ground ( if using meat), 2 large cans Dark Red Kidney Beans, 1 small can black beans, 1 Taco Seasoning Packet, 1 Salsa Mix Packet, 2 Large Cans Diced Tomato, 2 Large Sweet onions, 2 large Red Peppers, 2 stalks celery, 1 carrot (grated) and 1 Head of Garlic.
Start by Browning meat if that is your choice, remove and drain, In same pan sauté the garlic and onion finely mined. After they have become see through add diced Red Pepper, diced celery , 1 grated Carrot and sauté until tender. This is when you grab your crock pot. Open cans of beans and Tomatoes and add to crock Next you will add the meat to sauté’ pan of vegetables. After the meat is warm it can go in the crockpot. Finally mix in the taco mix packet, 1 salsa mix packet, and 1 cup HOT Water. Stir thoroughly and set to High to cook for 3 hours , reduce and cook on low until ready to serve. If you are doing the recipe overnight low setting will be perfect.
This meal will keep for hours and build flavor as it cooks. What a great overnight fix or all day cook. Anyone Can Cook, and you just made some Amazing Chili!
