Amish Mustard Macaroni Salad

A fitting side dish to any grilled burger or Dog this one is fast, Cheap and Easy! This is a perfect make ahead to have a quick dinner.

Shopping List… 1 Box of Elbow Macaroni , 3 stalks of celery, 2 large carrots, 1 small Sweet onion, 3 hard boiled eggs, 2 cups of Mayo or Miracle Whip, 1/4 cup of sweetener or sugar, 1/4 cup of white Vinegar, 1/8 yellow mustard, salt, pepper and parsley.

While you are boiling and preparing you Macaroni and Hard boiled eggs prepare the rest of ingredients. Small cube chop celery, carrots and onion , and hard boiled eggs. In a separate bowl mix mayo, sweetener, and Vinegar. The trick here is to whisk in the vinegar to get an emulsion rather than a milky mixture. You should have a tangy sweet and sour dressing to add to your salad.

Drain and rinse with cool water your pasta . Allow to drain for a reasonable amount of time maybe 10 minutes before adding the rest of the ingredients and dressing. After you have the entire salad mixed add your peeled hard boiled eggs. THE SECRET here is a family one. We add sweet pickles to the salad. ANYONE CAN COOK, this perfect burger side!
