A hearty casserole easy to assemble and full of so many essential food groups this is the perfect winter meal. You can make, bake , serve, or hold for another night. This is most definitely an ” add to your recipe box” favorite.
Shopping list is a bit larger than most meals , but well worth the hunt and gather trip. 1 pound 80/20 ground beef, 1 large sweet onion, 1 large bag mixed Vegetables, Shredded cheddar cheese, 1 au just dry mix packet and the topper is Mashed Potatoes. ( You can refer back to my blog on Mashed Taters) or cut corners and buy a box of instant taters. Your level of commitment is solely up to you. HOW MUCH DO YOU LOVE YOUR FAMILY , THAT DAY! LOL I act as if I don’t care, but I always make fresh.
Start by browning your ground beef , drain and set aside. In the fry pan add the onion finely diced and brown. After your onions have caramelized and become translucent you add back in the meat. At this time add the dry packet and 1/4 cup water. Allow to simmer 10 minutes , remove from heat. In a casserole dish you will assemble the meal. Start with meat mixture on bottom, on top of this spread the bag of mixed Vegetables evenly. My special spin comes here, I add a thin layer of cheese across the entire pie. Finally , you cover the top with a 1 inch thick layer of mashed tater Goodness. I always dot the top with a small amount of butter for good measure and a sprinkle of cheese.
Into the oven you go for 20 minutes at 350 degrees. Remove and let rest of 5 minutes before serving. ANYONE CAN COOK, now you can make my Mrs. Shepard’s pie!
