We always are pressed to find a quick meal that everyone will eat on Friday nights. We have a picky toddler and she makes dinner preparation a bit difficult. This one is quick, Simple and Flexible.
Suggested Recipe ( but I encourage you to add your own choices)
2 Chicken Breast cut in cubes, 3 cloves of garlic, 3 TBSP of Cream Cheese, 1 Stick Butter, 1 Lemon, Veggies of your choice. 1 Box of Penne, Rotini or thick short pasta. Finally 1 cup of heavy cream
In a deep frying pan I melt the stick of butter, mince the 3 cloves of garlic and add cubed chicken. When they are cooked through , remove them from the pan and set in dish to side. I then add 2 to 3 cups of Fresh Veggies. I use zucchini, broccoli, cherry tomato, peppers . Any thing your family will eat, will work. Think Stir Fry Veggies.
Cook your pasta , until you have the desired doneness. At this point you will add chicken to the vegetable mixture , cut lemon in half and squeeze all juice into the pan. Make a small WELL in the middle of the pan and add cream cheese , warm until it melts. You will add your drained pasta noodles. At this point stir in heavy cream. Cook for another few minutes and you are ready to serve.
